We are still months away from the Tri-State Fair to make a stop here in Amarillo, Texas. Even when they do there is one fair food that you will not be able to find as you are making your fair food selection.

This one fair food item was a lot of people's reason for going and they disappeared from the fair back in 2020. The year that the pandemic hit was the end of St. Matthew's booth at the Tri-State Fair.

That has made many of us miss their stuffed sopapillas. The real heroes are whoever knows the recipe for that great salsa that they serve along with the sopas. That stuff is wonderful. If you are missing either of these fan favorites you are in luck.

I recently received a message from St. Matthew's Pastor, Emanuel Burgos letting me know about the good news. There will be three dates in 2025 to reminisce with this great fair favorite:

Just letting you know that we will sell our stuffed sopapillas 3 times in 2025. March 1st will be our first event.

Nothing is better than that sopapilla stuffed with meat and potatoes. Unless of course the hot sauce they serve with it. That is just the perfect finishing touch. Of course, with any one-day event like this, I would recommend getting there early. I mean if they sell out they sell out. I hope they do.

There is a two-hour window to get these wonderful stuffed sopapillas on Saturday so promptness is important. You don't want to miss out.

There will only be two more days this whole year to get your hands on one. Don't miss or waste your day by not stopping by. Trust me, even if you have never had one you will definitely be glad that you went.
